Peanut butter Jelly Apple ‘Nachos’




  • 1 large apple (or 2 small apples)
  • 1-2 tablespoons smooth peanut butter, melted
  • 1-2 tablespoons jelly, your favourite flavour
  • Chia seeds, optional

Gluten-free choc coconut cookies



  • 2 eggs
  • 90g sugar
  • 200g coconut desiccated
  • 75g butter melted, cooled to room temperature
  • 100g chocolate chopped
  • Pinch salt

Set your over to 190C and line a baking tray.
Whisk the eggs and sugar in a bowl until mixed. Add the coconut, salt, chocolate and butter and stir until well-combined.
Let the batter sit for 20 minutes.
Spoon 20 piles onto the tray and shape them into a pyramid.
Place in the oven and bake for 10-15 minutes or until is golden on top.
Sprinkle with sea salt before serving.

Mini olive and feta muffins


  • ½ cup sliced pitted olives
  • ½ cup chopped feta cheese
  • ½ cup finely sliced spring onion
  • ¼ cup extra virgin olive oil
  • 1 egg
  • 1 cup milk
  • 1 - ½ cups sifted self-raising flour


Preheat the oven to 200°C.
Combine all ingredients, stirring briefly until just combined.
Place mixture into mini muffin tins and bake for about 10 minutes or until cooked.


Pan Fried Cinnamon Bananas

  • Bananas - slightly overripe
  • Sugar - or sugar substitute like granulated Splenda
  • Cinnamon

  1. Slice the bananas into rounds.
  2. Combine the cinnamon, sugar, and nutmeg in a small bowl and set aside.
  3. Spray a skillet with nonstick spray, heat over medium, and then add the banana rounds.
  4. Sprinkle about ½ of the cinnamon mixture, then cook for 2-3 minutes until the rounds start to warm.
  5. Flip the rounds, sprinkle the rest of the cinnamon mixture, then cook for another 2 minutes or so until the bananas are warmed through.

Balsamic Bruschetta


  • 1 tbsp Basil, fresh

  • 3 garlic cloves

  • 2 red onions, small

  • 3 tomatoes, large

  • 2 ½ tbsp Balsamic vinegar

  • 1 Salt & Pepper

  • 1 tbsp Olive Oil

  • Bread crusty


  1. Dice the tomatoes, onions, and garlic. Chop the basil. Mix half the basil and all the tomatoes, onions, and garlic.
  2. Add the balsamic and oil and mix well.
  3. Season with salt and pepper to your liking. I usually use ¼ teaspoon salt and ⅛ teaspoon pepper.
  4. Serve on top of toasted bread slices. And last, enjoy!
